The perfect mid-week dinner, this is probably the shortest recipe I’ve ever posted. It’s a looking-forward-to-summer, I-want-to-go-back-to-Greece kind of recipe, and it really is delicious. It all goes in one dish and straight into the oven and is so fantastically easy – what more could you possibly ask for?
It’s not too carb heavy, so is perfect as everyone seems to be trying (even if only half-heartedly [ok, maybe that’s just me]) to lose a bit of weight for summer.
Serves: two people.
Cost per person: £0.79 (price based on Tesco Value ingredients).
Ingredients:
- 4 chicken drumsticks
- 1 red onion
- 1 garlic clove
- 50g olives
- 1 tsp oregano
- 1 tsp rock salt
- Vegetable oil
Method
1) Preheat the oven to 180C.
2) Chop your onion into wedges and finely chop your garlic. Put into a baking dish with your chicken drumsticks and olives, season with oregano, sprinkle with salt and drizzle with oil. Bake in the oven for 25-30 minutes, until the juices of the chicken run clear.
3) Serve with pitta bread, tzatziki and lemon wedges.
