Warming festive tipples

Eggnog

If you’re partial to a little tipple over the festive period, then why not try something a bit different with these Christmassy drink recipes from Waitrose. Mulled wine is so last year darling!

American eggnog

Waitrose eggnog recipeEggnog is essential to Christmas celebrations in the USA.  It’s like a frothy cream liqueur. Eggnog can be made in advance (and stored in the fridge), but it should be served within 24 hours as it contains raw egg.

Preparation time: 20 minutes
Serves: 6

Ingredients

2 large eggs, separated
25g caster sugar, plus extra to taste
100ml rum or bourbon
200ml whole milk
150ml whipping cream
Freshly grated nutmeg, to serve

Method

1. Whisk the egg yolks and caster sugar for a few minutes with an electric whisk until pale, light and fluffy. Gradually whisk in the rum or bourbon a little at a time, then whisk in the milk. The mixture will separate over time, so it may need to be whisked again.

2. In a separate bowl, whisk the egg whites until they form soft peaks. Fold the boozy egg mixture into the whites very gradually. Finally, whip the cream until it just holds its shape and fold that into the mixture as well.

3. Sweeten to taste with extra sugar if you wish.  Ladle into punch glasses and serve with a dusting of nutmeg – and if you’re feeling really festive, garnish with a cinnamon stick for the final flourish!

Please note: This recipe contains raw egg, so it is not suitable for for pregnant women, the elderly and those with weak immune systems.

Hot buttered rum

Hot buttered rum

This hot buttered rum is simple to make, rich, warming and delicious. The aromas alone are enough to warm you as you come in from the cold!

Preparation time: 10 minutes
Serves: 1

Ingredients

1 tsp unsalted butter
1 tsp maple syrup
1⁄4 tsp ground allspice
3 cloves (if desired)
50ml Mount Gay Black Barrel Rum (or similar golden rum)
Apple juice
Whipped cream
Nutmeg

Method

Gently heat 1 tsp unsalted butter, 1 tsp maple syrup, 1⁄4 tsp ground allspice and 3 cloves (if desired) in a pan until smooth and combined. Turn off the heat, stir in 50ml Mount Gay Black Barrel Rum (or similar golden rum), then strain into a heatproof mug or glass. Top up with warm apple juice, and add some whipped cream and nutmeg for extra decadence.
