Very Simple Homemade Pizza – Say no to takeaway!

SERVES 4

Ingredients
50ml olive oil, additional oil for the tray
400g plain flour, approx 760ml in a jug if you have no scales (also works with self raising)
15g easy-blend dried yeast
2 tsp sugar
250ml warm water
150ml passata
Salt & Pepper
125g mozzarella, half grated, half chopped
4 tbsp grated parmesan or vegetarian alternative
small bunch coriander chopped
Your choice of additional toppings e.g. pepperonis, meatballs, chillies etc.

Instructions

  1. Heat oven to 220C/200C fan/gas 8. Oil the largest baking tray you have. Mix the flour, yeast, 1/2 tsp salt and the sugar in a bowl, then stir in the water and oil. Bring the mixture together, knead until smooth (if the base is too floury add more water, too sticky add more flour, it should clean the bowl and your hand as you knead it) then press it into the oiled tray making the base as thin as you can pushing it into all the corners of the tray.
  2. Spread passata over the dough right to the very edge. Season the passata with Salt & Pepper, then sprinkle with the half the chopped coriander, the grated mozzarella, add your additional toppings, add the chopped mozzarella and the Parmesan, and bake for 15-20 mins or until cooked through. Scatter with the remaining coriander and serve with a side salad.
