Stuffed chicken breasts wrapped in bacon

A great way to jazz up some chicken breasts, the bacon keeps the chicken nice and moist as well!

SERVES 4

Ingredients
4 Chicken Breasts
8 Pieces of Bacon
Your choice of cheese
4 Garlic Cloves
Oil
Fresh herbs e.g. Basil, Coriander & Oregano
Salt & Pepper
Chips ( or if you are healthier, new potatoes and veg!)

Instructions

  1. Heat oven to 200C/180C fan/gas 7. Oil the largest baking tray you have. Make a slit in each chicken breast so it has a pouch (be careful not to go all the way through!)
  2. Stuff each chicken breast with your choice of cheese, half a clove of garlic (finely chopped) and the fresh herbs.
  3. Wrap each breast in two bits of bacon (Easiest way I find is to put two bits of bacon together, place the chicken on top and then just roll holding the end of the bacon!) Make sure the slit is completely covered.
  4. Pop in the oven for around 30 minutes or so. Check to see if the chicken is cooked by piercing it with a knife and seeing if the juices run clear.
  5. Cook your chips (or new potatoes and veg!)
