Impress your housemates with a ‘Fakeaway’

Why not get your friends together this new uni term for a Friday night ‘Fakeaway’? These recipes courtesy of Waitrose are delicious and so simple to make!

Singapore noodles

Singapore Noodles

Ready-cooked rice noodles make this classic dish so simple to prepare at home. And the delicious, vegetable-packed version is on the table in just 25 minutes – perfect for Friday evenings.

Preparation time: 15 minutes
Cooking time: 10 minutes
Total time: 25 minutes

Serves: 4

Ingredients

Sunflower oil spray
4cm piece root ginger, finely chopped
1 tbsp hot curry powder
1 Chinese leaf cabbage, cut diagonally into 1cm-thick slices
2 carrots, very thinly sliced
200ml Cooks’ Ingredients chicken stock
1 tsp light brown muscovado sugar
Juice ½ lemon
1 tsp Kikkoman less salt soy sauce
400g cooked, peeled prawns
300g Waitrose rice noodles
300g essential Waitrose beansprouts
1 bunch salad onions, thinly sliced

Method

1. Spray a wok with oil and stir-fry the ginger for 1 minute. Add the curry powder and cook for a minute more.

2. Add the cabbage and carrots, and stir-fry for 2 minutes. Mix together the stock, sugar, lemon juice and soy sauce. Add to the pan along with the prawns, noodles and beansprouts, and cook for 3–4 minutes, until piping hot.

3. Stir through the salad onions, then divide between four bowls and serve.

Cook’s tip

Swap the prawns for leftover cooked, shredded chicken.

Mexican vegetable tortilla layer

Mexican Vegetable Tortilla

Total time: 30 minutes

Serves: 4

Ingredients

350g tub essential Waitrose Tomato And Chilli Sauce
395g can essential Waitrose Kidney Beans In Chilli Sauce
500g frozen essential Waitrose Vegetable Mix
28g pack coriander, chopped
4 essential Waitrose Large Tortilla Wraps
75g essential Waitrose Cheddar Cheese, grated

Method

1. Preheat the oven to 200°C, gas mark 6. Grease a round casserole dish of about the same diameter as the wraps.

2. Heat the sauce and the kidney beans in a pan, and add the vegetables. Simmer for 3–4 minutes. Stir in half the coriander.

3. Place 1 wrap in the base of the dish, top with one third of the vegetable mix and lay another wrap on top. Repeat, finishing with the last wrap.

4. Sprinkle over the grated cheese and the remaining coriander, then bake for 20 minutes until golden.

Bacon and mushroom pizza

Bacon & Mushroom Pizza

Ingredients

1 x Pack of Waitrose LOVE Life Free From 4 White Pittas
200g pack essential Waitrose Smoked British Bacon Lardons
400g can essential Waitrose Chopped Tomatoes
200g essential Waitrose Cup Mushrooms, thickly sliced
100g essential Waitrose Cherry Tomatoes, halved
125g pack essential Waitrose Italian Mozzarella, thinly sliced
½ x 25g pack basil, roughly torn

Method

1. Preheat the oven to 200°C, gas mark 6. Place the pittas on a baking tray.

2. Fry the lardons in a large frying pan for 3 minutes, add the chopped tomatoes and cook for 5–6 minutes until thickened.  Spread over the pittas to the edge.

3. Top with the mushrooms and cherry tomatoes.  Arrange the mozzarella on top and bake for 15–20 minutes until golden. Scatter over the basil before serving.
