This is a little bit of a treat meal, but it’s definitely worth it. Chicken, tomato and mozzarella, what more could you possibly want? The perfect pick-me-up meal, and it’s really easy to make.
Not gonna lie, it’s also great for when you’re in a bad mood and want to pound the life out of the chicken (definitely didn’t do that [definitely did]).
Leftovers should be fine to reheat for around three days if kept in the fridge.
Serves: two people.
Cost per person: £1.42 (price based on Tesco Value ingredients).
Ingredients:
- 2 chicken breasts
- 1 ball (125g) mozzarella
- 1 can (400g) chopped tomatoes
- 1 garlic clove
- 1 tsp mixed herbs
- Salt and pepper, to season
Method
1) Preheat the grill.
2) Place your chicken breasts in plastic sandwich bags, and beat them with a rolling pin until they’re about a centimetre thick (it is particularly helpful to do this when in a bad mood, although you may scare people by over-bashing the chicken).
3) Grill the chicken for about 10-15 minutes, turning halfway through.
4) At the same time, put your tomatoes in a pan with the garlic and mixed herbs, and about 100ml of water. Season with salt and pepper and simmer for about 10 minutes, until thickened.
5) Put your chicken in a baking dish, cover with tomato sauce and then cover that with a layer of mozzarella.
6) Pop it back under the grill for about 5 minutes, until the mozzarella is melted and bubbly.
7) Serve with vegetables, and enjoy!
