This is a great little dish – lovely, simple flavours and ready in five minutes flat. It’s great as either a salad or a side dish, and this recipe makes loads so there’s plenty left over for lunch the next day too. And it’s so cheap you just can’t say no!
This makes for quite generous portions (I got carried away, couscous salad is very tasty), so if you just want it as a little side dish then you might want to assume that these amounts serve seven or eight people, and maybe half the recipe.
Serves: six people.
Cost per person: £0.21 (price based on Tesco Value ingredients).
Ingredients:
- 500g couscous
- 1 red pepper
- 1 small onion
- 1/3 of a cucumber
- 1 vegetable stock cube
- Salt and pepper, to season
Method
1) Cook the couscous with the stock cube in boiling water for around 3 minutes. Drain, and stir it around a bit to make sure it’s fluffy.
2) Chop the cucumber and pepper into chunks, and finely chop the onion. Stir into the couscous.
3) Cool in the fridge if you prefer, or just eat it warm. It’s delicious either way!
